Lotus Root and Dried Octopus Soup

Nutritional Value

Lotus root is rich in iron and good for anemia. Lotus root contains polysaccharides, including dehydrated pentose, glucose, pentose, etc, which are good antioxidants for the immune system.

Black-eyed pea and mung beans are rich in vitamin B complex, minerals and plant-based proteins. Vitamin B complex can help eliminating free radicals in the body and reduce the risk of cancer.

Ingredients

  • 500g lotus root
  • 1 big dried octopus
  • 120g mung bean
  • 120g Black-eyed pea
  • A small piece dried tangerine peel (chenpi)
  • 90g Gordon euryale seed
  • 500g pork bone

Directions

  1. Put the pork bone in a pot of cold water. Heat them until the water boils, then take out the pork and rinse it thoroughly. (This procedure can remove the odour of the pork and remove the dirts)  
  2. Peel the lotus root, wash and cut into piece.
  3. Soak the dried octopus into water for around 30 minutes. When it is softened, remove the eyes and cut it into small pieces.
  4. Wash other ingredients. 
  5. Put all ingredients into water.  Bring it to a boil over high heat.
  6. Turn to small heat for further 1.5 hours. Season with salt.
