Sweet Potato Quinoa Congee with Peanuts

Nutritional Value

This dish is a nutritious congee that helps fulfill the nutritional needs of cancer patients. The congee includes sweet potato, which is rich in vitamin A and dietary fiber etc. It also contains a high variety of polyphenols that possess anti-oxidative effects and can support patients’ immune function.

For quinoa, it is a source of high-quality protein. It is also high in iron, vitamin B and dietary fiber etc. Adequate consumption of dietary fiber is crucial for maintaining gut health. When combined with bean curd sheet, eggs, and peanuts, these ingredients can increase the protein content in the congee. It would be helpful for meeting the protein needs in ovo-vegetarians and cancer patients or survivors.Additionally, bean curd sheet, eggs and peanuts contribute to a higher calorie count, which is beneficial for patients needing to increase their energy intake.

Overall, this congee is nutritious and easy to make. It would be suitable for cancer patients experiencing fatigue or with poor appetite. Besides as a breakfast, it can also serve as a snack between meals, thereby boosting energy and protein intake in cancer patients.

Ingredients

Serves 2

  • 30 g uncooked quinoa
  • 40 g uncooked white rice
  • 1 teaspoon of canola oil
  • 15 g of bean curd sheet (rinsed and crushed into pieces)
  • 30 g of peanuts
  • 250 g sweet potato (skin removed, diced)
  • 2 medium eggs

Directions

1. Wash the quinoa and white rice. Mix them with 1 teaspoon of oil.

2. In a saucepan, add 1.2 L of water, the peanuts, bean curd sheet and sweet potato. Bring the water to boil.

3. Add the quinoa and white rice into the saucepan. Stir until it boils again. Then, cover the saucepan with a lid, leaving a gap for steam to escape. Turn to medium heat and allow it to simmer for around 30 minutes.

 

4. When the congee is nearly ready, add the whisked egg slowly while stirring to form egg drop. Stir until the texture of the congee is as desired.

5. Serve and enjoy!
