Scrambled Eggs with Yardlong Beans and Shrimp

Nutritional Value

Eggs have a very high nutritional value. Not only are they high in protein, but they can also provide essential nutrients such as vitamin A, B, D, selenium, and iron etc., making them an excellent choice for boosting nutrient intake. The fat content in eggs can also increase the calorie content of the dish, which would be helpful for cancer patients who need to maintain their body weight. In addition, yardlong beans, apart from adding texture to the scrambled eggs, are also a good source of vitamin C, which is an antioxidant. It can reduce damage caused by free radicals to the body’s cells and help strengthen the immune system. This dish would be suitable for cancer patients who need to increase their energy and protein intake.

Ingredients

Serves 2 persons

  • Eggs (medium-size) 3 (150 g)
  • Yardlong beans 100 g
  • Carrots 20 g
  • Frozen shrimp 80 g
  • Canola oil 1½ tbsp
  • White pepper powder 1/8 tsp
  • Salt 1/8 tsp

Directions

1. Chop the yardlong beans and peeled carrots. Cut the shrimp into small pieces.

2. Marinate the shrimp with white pepper.

3. Crack the eggs. Add salt and whisk until combined.

4. Heat up a wok over medium heat. Stir fry the yardlong beans and carrots with 1 tablespoon of oil until the yardlong beans are softened (around 3 min).

5. Add the shrimp pieces. Stir fry until cooked.

6. Add ½ tablespoon of oil, followed by the eggs. Stir fry until the eggs are cooked.

7. Ready to serve.
