Hairy Gourd and Dried Octopus Soup

Nutritional Value

Hairy Gourd contains a variety of vitamins and minerals, such as vitamin A, vitamin B1, vitamin B2, vitamin C, phosphorus, calcium and iron, as well as riboflavin and carotene.

Black-eyed pea is rich in vitamins and minerals which can improve the immune system.

Ingredients

  • 500g pork bone
  • 3 pieces hairy gourds
  • A big dried octopus
  • 100g of black-eyed pea
  • 6 pieces dried oysters
  • 2 pieces honey dates
  • 1 small piece dried tangerine peel (chenpi)
  • 3.5L water

Directions

  1. Put the pork bone in a pot of cold water. Heat them until the water boils, then take out the pork and rinse it thoroughly. (This procedure can remove the odour of the pork and remove the dirts)
  2. Peel and wash the hairy gourd. Cut them into pieces.
  3. Soak the dried octopus into water for around 30 minutes. When it is softened, remove the eyes and cut it into small pieces.
  4. Wash the black-eyed pea, dried osters, honey date and dried citrus peel. No need to scrape the dried chenpi.
  5. Put all the ingredients into water.  Bring it to a boil over high heat.
  6. Turn to small heat for further 1.5 hours. Season with salt. 
  7. If you want the soup with a richer taste, you can cook on low heat for 1 hour, turn off the heat and stay warm for 1.5-2 hours. Then bring it to a boil and cook on low heat for another half an hour. Season with salt.
