Ruby Pearls Hidden in White Jade

Nutritional Value

Chicken breast and salmon are both excellent sources of protein. Every 100 grams of raw, skinless, and boneless chicken breast can provide 23 grams of protein, while the same amount of raw salmon can provide 20 grams. Protein plays a crucial role in tissue repair, immune system support, and maintaining muscle mass. Salmon, being an oily fish, also contains omega-3 fatty acids. Omega-3 fatty acids possess anti-inflammatory properties and could help restrain the progression of cancer. 

Broccoli and tomatoes are both rich in antioxidants, with broccoli containing sulforaphane and tomatoes containing lycopene. These substances may help in slowing cancer cell growth. In addition, these ingredients also contain dietary fiber, which promotes gut health by improving bowel movement, reducing the contact between harmful substances and the cells in the gut, and enhancing the production of short chain fatty acids which reduce the generation of carcinogenic substance. These effects help in preventing colorectal cancer. Consuming more dietary fiber is also related to a reduced risk of gastric, breast, endometrial cancer etc.

Ingredients

  • 200g chicken breast  
  • 100g salmon  
  • 200g broccoli  
  • 150g tomato  
  • 5g rock salt  
  • 5g rare sugar  
  • 30g soft meal enzyme  
  • 500g clear chicken broth 

Directions

  1. Chop the broccoli and add it to the clear chicken broth. Add the soft meal enzyme in proportion and use the handheld mixer to blend until smooth and creamy.
  2. Pour the broccoli mixture into the rose-shaped mold and steam in a water bath for 8 minutes. Remove and let cool.
  3. Cut off the tops of the tomatoes and use the fruit pearl stick to scoop out the tomato cores. Set aside.
  4. Finely chop the chicken breast and salmon separately.
  5. Add the chicken breast and salmon to their respective portions of clear chicken broth and seasonings. Add the soft meal enzyme in proportion and blend until smooth and creamy.
  6. Layer the salmon and chicken mixtures into the tomato cups and steam in a water bath for 10 minutes. Remove and let cool.
  7. Combine the scooped-out tomato cores and broccoli with clear chicken broth and seasonings. Add the soft meal enzyme in proportion and blend until smooth. Pour into a flat dish and steam in a water bath for 5 minutes. Remove and let cool, then use a heart-shaped mold to cut out heart-shaped slices.
  8. Arrange the steamed tomato cups filled with chicken and salmon on a plate, surrounded by broccoli roses and heart-shaped tomato slices. Add tomato sauce to serve.
