Red Bean Soup

Nutritional Value

Red bean is rich in dietary fibre, vitamins and various trace elements such as calcium, magnesium, copper, manganese and zinc.

Black glutinous rice is nutritious. It is rich in protein, calcium, phosphate, iron, Vitamins B1, B2 and dietary fibre. Red bean soup is good for bowel movement and prevent constipation.

Ingredients

  • 300g red bean
  • 10 pieces lotus seeds
  • 1 pack fresh lily bulb
  • 80g black glutinous rice
  • 40g polished rice
  • 1 small piece of dried tangerine peel (chenpi)
  • Half pieces of rock sugar
  • Appropriate amount of crystal sugar
  • 3L water

Directions

  1. Soak red beans overnight. The amount of water should be enough to cover the red beans.
  2. Soak the white lotus seeds overnight. Remove the lotus plumule when the lotus seeds are soft.
  3. Wash all the ingredients. 
  4. Don’t scrape the chenpi. Put it in water and bring it to a boil over high heat.
  5. Put the red beans into the boiling water. Open the lid and cook for 20 minutes on high heat.
  6. Cover the lid but do not seal tightly. Leave some space. Turn to medium-low heat and cook for 50 minutes.
  7. Add in white lotus seeds, polished rice and black glutinous rice. Bring it to a boil, then turn to medium-low heat.  Cook for further 40 minutes. Adding polished rice can make the red bean sweet soup gooey.
  8. Add in rock sugar and crystal sugar. Mixing the two together can make the sweet soup more nourishing.
  9. Add fresh lily bulb after turning off the heat. If dried lily bulb is used, it should be pre-soaked and added together with lotus seeds.
  10. Add some water if the sweet soup is too thick.
