Steamed Egg with Shrimp

Nutritional Value

Shrimp is a kind of low fat and high protein food. It is rich in vitamin B12, niacin, astaxanthin, unsaturated fatty acids, and contains a variety of minerals, such as selenium, iodine, iron, zinc, and magnesium. Astaxanthin is a carotene with antioxidant effects. The unsaturated fatty acids can protect the cardiovascular system. Selenium can improve the immune system.

Egg has good quality protein. Besides, it is rich in vitamin A and carotenoids. Vitamin A helps maintaining mucous membrane healthy, and carotenoids reduces the risk of cataracts. More, vitamin A, folic acid and calcium are richer in egg yolk than in egg white.

Ingredients

  • 8 shrimps
  • 2 eggs
  • Little amount of salt

 

Seasoning: 

  • 1 pinch salt
  • 1 pinch pepper

Directions

  1. Take out the eggs from the refrigerator in advance and bring them to room temperature.
  2. Defrost the shrimps and soak in salt water for 15 minutes. Rinse and drain.
  3. Season the shrimps with salt and pepper. Put them on a dish.
  4. Add cold water into beaten egg. Not to use tap water. The ratio of eggs and cold water should be 1:1 to 1:1.2.
  5. Add the egg mixture into the dish of shrimps. Let it still for 15 minutes.
  6. Gently remove the air bubbles with a spoon. Cover the dish with cling wrap.
  7. Steam the egg for 5 minutes over a high heat. (Place the dish in when the water starts to boil.)
  8. Turn off the heat. Leave it in the pan for another 5 minutes. 
  9. (Optional) Serve the steamed egg with cooked oil or soy sauce.
