Vegan Rainbow Quinoa Tomato Bowl

Nutritional Value

Suitable for stable colon cancer survivors. High fibre diet is associated with lower risk of colon cancer in many studies.#

Colourful vegetables (tomatoes, bell peppers, carrots, onions) have a range of antioxidants and phytochemicals.

Low fat content including saturated fat, reduce risk of colon cancer recurrence by lowering cholesterol and bile production and promotes maintenance of a healthy weight (normal BMI) for the overweight/obese colon cancer stable survivors.

Easy to digest: soft baked tomatoes, cooked quinoa, chopped vegetables alongside with fluid from tomato flesh makes the stuffed tomatoes easy to digest.

Increased dietary fibre intake:

  1. Promotes SCFA production via gut bacteria fermentation, lower colon pH is associated with lower colon cancer risk and reduced formation of carcinogens (in particular by butyrate) by reduced level of pro-carcinogenic enzymes that converts bile acid to secondary bile acids that are carcinogenic
  2. Promotes production of good bacteria like lactobacillus
  3. Reduced intestinal transit time reduces fecal mutagen/toxin time to interact with colon mucosa

Prevent cancer cell proliferation: Low GI foods -> lower insulin -> lower insulin like growth factor 1 production -> may prevent cancer cell proliferation

#High fibre diet may not be suitable for patients shortly after surgery and for those with acute inflammatory bowel motions.

Ingredients

Serving: 2 persons

  • Beefsteak tomatoes 2 pcs (~370 g)
  • Uncooked Quinoa 2 tbsp (~45 g)
  • Yellow/green sweet bell peppers 40 g
  • Baby carrots 30 g
  • Onion 30 g

Seasonings:

  • Black pepper, trace
  • Salt, a pinch
  • Freshly squeezed lemon juice, a small drizzle

Directions

1. Cook quinoa in 200 ml water for 10minutes. Add washed chopped carrots in the middle. Preheat oven to 180°C.*

2. Wash and chop bell peppers and onions.

3. Wash beefsteak tomatoes. Slice off their top (cut horizontally) and hollow out the inside using a spoon. Do not dump and set aside.

4. Mix cooked quinoa, carrots and chopped ingredients in a bowl. Add in trace black pepper and a pinch of salt and mix well.

5. Add the filling (including tomato flesh) into the beefsteak tomatoes. Cover with tomato top and put the stuffed tomatoes into oven. Bake around 12-15 minutes at 180°C until cooked.

6. Drizzle the quinoa-stuffed tomatoes with lemon juice right before consumption. Serve and enjoy.

*For those without an oven, microwave quinoa stuffed tomatoes would be possible.
