Butternut Squash Salmon Mixed Rice

Nutritional Value

This recipe may be recommended for stable cancer survivors, especially colon cancer survivors.

Mixed rice with oats for rice provides softer texture and higher fibre content than brown rice.

High protein, mainly contributed by edamame and salmon. The recipe meets ~40% of daily recommended protein intake (1.2-2g protein per kg of body weight) for cancer patients.1 

Salmon: rich source of n-3 fatty acids, modulate host immune function, anti-inflammatory. Opted fish (i.e., salmon) instead of red/processed meat. Increased consumption of red meat is a probable cause of colorectal cancer.

Antioxidant-rich from colourful and varied ingredients (shimeji mushrooms, butternut squash, edamame, oats for rice).

Increased fibre intake, mainly contributed by butternut squash, edamame, oats for rice, shimeji mushroom. Consumption of foods containing dietary fibre probably protects against colorectal cancer. Mechanisms include:

  1. promoting SCFA production via gut bacteria fermentation, lowering colon pH which may lower colon cancer risk and reduce formation of carcinogens in particular by butyrate
  2. promotes production of good bacteria like lactobacillus
  3. reduced time for fecal mutagen/toxins to interact with colon mucosa.

Taste: Natural sweetness from butternut squash. Reduced-sodium light soy sauce to reduce sodium content of the recipe.

Ingredients

Serving: 2 persons

  • Butternut squash 130 g
  • Salmon fillet (frozen, raw) (~150 g)
  • Shimeji mushroom 50 g
  • Long-grain white rice 50 g
  • Oats for rice 70 g
  • Edamame (frozen) 90g
  • A small bunch of spring onion (~10g)
  • Water 100ml

Seasonings:

  • Reduced-sodium light soy sauce 2 tsps
  • Mirin 2 tsps
  • Fresh ginger, trace
  • Black pepper, trace
  • Extra virgin olive oil 1tsp

Directions

  1. Defrost salmon fillet in advance, remove the skin (if have) and cut into cubes. Marinate cubed salmon with 2 teaspoons reduced-sodium light soy sauce, 2 teaspoons mirin, and trace fresh ginger for ~10minutes.
  2. Defrost frozen edamame with water. Remove stems of Shimeji and wash them. Wash butternut squash, peel, remove seeds and cut it into inch-sized cubes. Wash and cut spring onions.
  3. Pour the washed white rice and oats for rice into a rice cooker. Add 100ml water. Add butternut squash, edamame, shimeji, and salmon. Cook in quick cook mode.
  4. After cooking, season with black pepper, add chopped spring onion, extra virgin olive oil and stir. Serve and enjoy.
