Beetroot with Corn Soup

Nutritional Value

Beetroot contains betacyanin which is a natural antioxidant with anti-cancer effect. It is rich in vitamin A, vitamin B1, vitamin K, iron, potassium and fibre. It can help prevent anemia and constipation.

Note: Beetroots are quite high in oxalates and may promote kidney-stone formation in susceptible individuals. They are also rich in potassium and are typically avoided in patients with chronic renal failure.

Ingredients

  • 1 beetroot 
  • 2 corns
  • 1 carrot
  • 20g apricot kernel
  • 20g cashew   
  • 2 candied dates
  • 6 figs
  • 1 pork shin

Directions

  1. Put the pork shin in a pot of cold water. Heat them until the water boils, then take out the pork and rinse it thoroughly. (This can remove the odour of the pork and remove the dirts.)
  2. Wash and peel the carrots and beetroot. Cut the carrots, beetroot and corns into big chunk.
  3. Wash the other ingredients.
  4. Put all the ingredients into water.  Bring it to a boil over high heat.
  5. Turn to small heat for another 1.5 hours. 
  6. Remarks: Roots and leaves of beetroot are edible. You can put them in the soup after rinsing them throughoutly.
