Stir-Fried Sea Cucumber with Chicken and Mixed Vegetables

Nutritional Value

  1. High-Protein

Sea cucumber and chicken are high-quality protein sources, containing complete amino acids. Additionally, edamame contains a large amount of plant-based protein, which can provide quality protein supplementation for cancer patients with increased nutritional needs during treatment, preventing muscle loss.

  1. Boosting Immune Function

Nutrients in red and yellow peppers, such as B vitamins, vitamin C, β-carotene, and lycopene, can activate and protect immune cells, strengthen the immune system, and enhance the self-immunity of cancer patients, thereby more effectively fighting against cancer [1][2].

  1. Antioxidant Properties
    • Enoki mushrooms  contain the antioxidant ergothioneine, which can help protect cells from free radical damage and aid in fighting cancer [3].
    • Ginger is rich in antioxidants, such as gingerol and shogaol, which can help suppress headaches and vomiting, promote blood circulation, dilate blood vessels, have antimicrobial properties, and promote bile secretion. These properties can also help strengthen the immune system and fight cancer.

**This dish, when combined with brown rice and millet, can provide a nutritionally balanced meal.

Ingredients

  • 2 sea cucumbers 
  • Half a chicken (skinned and cut into pieces) / 3 chicken fillets 
  • 1 package of enoki mushrooms 
  • Some edamame beans 
  • 1/2 red bell pepper and 1/2 yellow bell pepper 
  • 4 slices of ginger 
  • 2 cloves of garlic (peeled and sliced) 

Seasonings: 

  • 1 teaspoon of salt 
  • 1 tablespoon of oyster sauce 
  • 1 tablespoon of olive oil

Directions

Preparation time: 20 minutes

  1. Bring a pot of water to a boil, add 2 slices of ginger, and blanch the sea cucumbers for 3 minutes. Cut the sea cucumbers into pieces and set aside.
  2. Heat olive oil in a pan over medium heat, sauté the ginger and garlic until fragrant. Add the sea cucumbers, chicken pieces, and seasonings (1 teaspoon salt, 1 tablespoon oyster sauce, and some water) and cook for 10 minutes.

3. Add the enoki mushrooms, bell peppers, and edamame beans. Stir-fry for 5 more minutes.

4. Dish up and serve.
