Fried Winter Melon and Pork

Nutritional Value

Luffa has a variety of antioxidants, including carotenoids, vitamin C, vitamin E and trace amount of selenium. It also contains interferon inducer, which can enhance human immunity and inhibit the proliferation of cancer cells.

Black fungus is rich in calcium, iron and dietary fibre. It also contains pectin which can lower cholesterol.

Ingredients

  • 120g pork
  • 7 pieces of black fungus
  • 1 angled luffa (luffa)
  • 1 shallot
  • 150g winter melon
  • 3 pieces ginger
  • Little amount of shaohsing wine
  • Appropriate amount of salt

 

Seasoning:

  • 2 tablespoon soy sauce
  • 1 teaspoon sugar
  • Little amount of corn starch

Directions

  1. Wash and soak the black fungus. Remove the stems after they are soft.
  2. Wash and slice the pork. Mix the pork with seasonings.
  3. Peel the winter melon and luffa. Cut the winter melon into pieces and roll cut the luffa. 
  4. Add oil into a hot wok. Fry the pork until it is medium well. Take it out.
  5. Add the ginger and shallot until they are nicely smelled. Then put in luffa and black fungus. Fry until the luffa is a bit soft.
  6. Mix the pork with winter melon, luffa and black fungus. Fry until the pork is well done.
  7. Add some shaohsing wine and a little bit of salt. 
  8. Enjoy the dish.
