Stewed Glass Noodles with Tomato and Minced Pork

Nutritional Value

Tomato and Broccoli are rich in vitamin C and E which have antioxidative effect. Tomato also contains lycopene which is beneficial to breast cancer health. As tomato is heated with oil, more lycopene can be released. Broccoli is rich in sulforaphane which possess anti-inflammatory and anti-oxidative effects. Sulphoraphane may also suppress the multiplication of cancerous cells to and thus slow down the tumour growth in the body.

Ingredients

  • Glass noodles 20g 
  • Tomatoes 150g (1 medium size)
  • Broccoli 100g (half medium size)
  • Minced pork meat 80g  
  • 2 cloves of minced garlic 
  • Boiled water 100g (1/3 bowl)
  • Cooking oil 1 tablespoon  
  • Soy sauce 1 teaspoon

Seasoning

  • 2 teaspoons of corn starch 
  • 1 teaspoon of soy sauce 
  • 1 pinch pepper 

Directions

1. Soak the glass noodles in warm water until it turns soft.

2. Add the seasonings to the minced pork and mix well.

3. Wash and chop the tomato and broccoli into smaller pieces.

4. Heat up a pan over medium heat and put 0.5 tablespoon of oil. Put the garlic and then pork into the pan. Cook the pork until it starts to turn golden brown. Set the pork aside.

5. Heat up the pan over medium heat with 0.5 tablespoon of oil. Mix the tomato and broccoli first and then add the pork. 

6. Put the glass noodles together with boiled water and stew until all the water is absorbed by the glass noodles and the broccoli is softened.   Season with one teaspoon of soy sauce.

7. Enjoy the meal!
